Pomegranate Tabbouleh

When Linda Zaga, my friend and a Syrian food consultant, told me about growing up in Aleppo and eating tabbouleh flavored with pomegranates, I had my culinary doubts. But lo and behold—this staple of the Middle Eastern buffet is a knockout made with pomegranate syrup and tomato paste.

1 cup fine-grain bulghur

¾ cup boiling water

1 medium yellow onion, finely chopped

⅓ cup Pomegranate Syrup

½ cup chopped walnuts

2 tablespoons chopped fresh flat-leaf parsley

1½ tablespoons olive oil

1½ tablespoons tomato paste

1½ teaspoons chile paste or Tabasco

1 teaspoon freshly squeezed lemon juice

1 teaspoon salt
